Miso Caesar Dressing
  1. Combine egg yolk, white miso paste, and pressed garlic in a bowl. Whisk to combine.

  2. Whisk in Worcestershire, Dijon mustard, and Parmesan.

  3. Slowly drizzle in olive oil (a couple of drops at a time, whisking constantly), until combined and dressing is slightly thickened.

  4. Stir in red wine vinegar and lemon juice. Taste and season with salt and pepper.

  5. Cover and refrigerate for an hour, if possible. Otherwise serve immediately with crunchy romaine, more grated parmesan, and more freshly cracked black pepper.
