In a small food processor, process together ½ tub (8 oz) of cottage cheese, 2 eggs, a small handful cilantro, and one fresh garlic clove
Process well until combined
Grab a small baking tray and line with parchment paper
Spray the parchment paper with a touch of avocado oil
Pour the processed bread batter onto the tray
Spread the batter around with a spatula to create an even layer
Bake in the oven at 350F for 35-40 minutes until done
Remove from oven and let cool completely
Cut the bread into preferred size or shape
Make protein mayo by mixing 1 tbsp mayo with 4 tbsp yogurt, ½ tsp garlic powder, salt, and fresh cracked pepper
Assemble sandwich with one piece of bread, protein mayo, tomato, avocado, romaine lettuce, red onion, and 4 oz ham or protein
Top with the other piece of bread and serve
