One Pot Quinoa Taco Tuesday
  1. Add the oil, onion and pepper to a large skillet over medium heat, and cook 5 minutes until soft.

  2. Add the rest of the ingredients to the skillet and cover to cook for 20 minutes, or until broth is absorbed.

  3. Remove from heat, stir to combine, and add additional toppings. Enjoy!
