Preheat oven to 350°F (175°C). Grease or line an 8x8 baking pan.
In a large bowl, whisk eggs, applesauce, sweetener, Greek yogurt, oil, and vanilla.
In a separate bowl, mix almond flour, oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Combine the wet and dry ingredients, then fold in the diced apples.
Pour into the pan, smooth the top, and optionally sprinkle with cinnamon and monk fruit.
Bake for 30–35 minutes or until a toothpick comes out clean.
Let cool completely before slicing.
