Thai Green Mango Salad (som Tum Mamuang)
  1. Pound together garlic, red chilies, sugar and lemon juice in a mortar pestle. Remove in a bowl.

  2. Add the rest of the ingredients for the dressing to the bowl and whisk well. Keep aside for 15 mins.

  3. In a large bowl transfer all the ingredients for the salad keeping aside 1 tablespoon of peanuts for garnishing.

  4. Now add the dressing and mix lightly. Top with the peanuts and some cilantro leaves. Serve immediately.
