Italian Bean Soup
  1. Brown sausage and onion in a large pot until no pink remains. Drain any fat.

  2. Add remaining ingredients and bring to a boil.

  3. Reduce heat and simmer 15 minutes or until carrot is tender and flavors have blended.

  4. Discard bay leaf and serve.

  5. Garnish with parmesan cheese and parsley if desired.
