Pumpkin Coffee Muffin
  1. Whisk or blend wet ingredients together until smooth.

  2. In separate bowl, whisk dry ingredients together until combined.

  3. Fold wet and dry ingredients together gently until batter is uniform.

  4. Prepare muffin tins with liners or grease, using only every-other well.

  5. Fill ⅓ of each prepared well with batter. Add a sprinkle of coffee cake crumble in a thin layer and then fill rest of well to the top.

  6. Coat the top of the batter with another sprinkle of coffee cake crumble.

  7. Bake. Mini muffins: 350degrees for 12-15 minutes. Regular muffins: 415degrees for 6 min and 12 min at 350.
