Add whole wheat pastry flour, brown sugar, and baking powder. to mixing bowl and combine.
Mix egg, brown sugar, milk, vanilla and 1 tablespoon olive oil.
Add egg mixture flour.
Let batter sit for 5 minutes.
Heat 1 tablespoon olive oil in frying pan over medium heat.
Add ¼ cup batter to frying pan. Repeat for 3-4 pancakes.
Cook until bubbles form in the batter.
Flip pancake over in pan. Continue cooking until the pancake springs back when lightly touched with a finger.
Serve with cooked fruit ot pure maple syrup.
