Light And Fluffy Healthy Pancakes
  1. Add whole wheat pastry flour, brown sugar, and baking powder. to mixing bowl and combine.

  2. Mix egg, brown sugar, milk, vanilla and 1 tablespoon olive oil.

  3. Add egg mixture flour.

  4. Let batter sit for 5 minutes.

  5. Heat 1 tablespoon olive oil in frying pan over medium heat.

  6. Add ¼ cup batter to frying pan. Repeat for 3-4 pancakes.

  7. Cook until bubbles form in the batter.

  8. Flip pancake over in pan. Continue cooking until the pancake springs back when lightly touched with a finger.

  9. Serve with cooked fruit ot pure maple syrup.
