Chop the eggs and place them in a bowl. Add all the ingredients (but not the microgreens and smoked paprika), and give it a good pinch of salt and pepper. Stir to combine. Let it chill in the fridge for about 30 minutes, then spoon it onto toasted grainy bread. Sprinkle the smoked paprika over each sandwich and garnish with the sprouts or microgreens!
Makes 4-6 sandwich halves, depending on how tiny or massive you make them.
