Peach And Prosciutto Salad Wreath
  1. Preheat oven to 180C.

  2. Tear bread into smaller rough chunks.

  3. Drizzle with olive oil and season with dried rosemary and salt.

  4. Bake for approx 10 mins until golden and crunchy.

  5. Take a large circular platter.

  6. Arrange rocket around the edges as the base of the wreath.

  7. Add thinly sliced peaches.

  8. Add prosciutto that has been torn into smaller pieces and roughly curled.

  9. Drain and pat dry mozzarella. Tear into rough pieces and add to the wreath.

  10. Add croutons and basil leaves.

  11. Season with salt, drizzle with extra virgin olive oil and balsamic glaze.
