Prepare the rice: Bring 2 cups of salted water to a boil in a small sauce pan.
Once boiling, add the rinsed rice, stir, reduce heat to medium low, and cover. Let simmer until the water
is absorbed and rice is fluffy, 15 to 20 minutes. Remove from heat and mix in the cilantro, lime juice, and
salt.
Meanwhile, prepare the ground turkey. Combine the spices in a small bowl and set aside.
Heat the oil in a large skillet over medium heat. When the oil is heated and shimmering, add the ground
turkey. Cook, stirring occasionally, until browned all over and fully cooked, 8 to 10 minutes. Add the
spice mix and mix to evenly combine.
Meanwhile, prepare the bean salad: Add all ingredients to a mixing bowl and toss to evenly combine.
Set aside until serving.
Prepare the Yogurt Sauce: Add all the ingredients to a small bowl or container and whisk until evenly
combined. Salt to taste.
To assemble each serving, add ¾ cup of reheated Cilantro Lime Rice, a quarter of the cooked and
reheated ground turkey, and 1 cup of Black Bean Salad to a bowl. Top with a scoop of Chili Lime Yogurt
Sauce enjoy.
