Ingredients:
Preheat oven to 350 degrees
Place flour tortillas on a cutting board. Cut off 2 sides of the tortillas leaving a 4" center. Cut center section in half lengthwise.
Spray a bundt pan with cooking spray. Place center tortilla strips in the bundt pan forming a fan pattern. Sprinkle with half the chihuahua cheese.
Spread half the taco meat on top of the cheese. Place 4 of the round tortilla strips around on top of the taco meat.
Sprinkle with cheddar cheese on top of the tortillas. Top with Tostada shells broken in half. You will have 4 pieces. Top with rice.
Place 4 of the round tortilla strips on top of the rice. Sprinkle with the remaining chihuahua cheese. Spread the rest of the taco meat on then some green onion and jalapeño. Sprinkle with the rest of the cheddar cheese. Place the rest of tortilla rounds on top of the cheese. Fold the tortilla strips until they are flat.
Bake for 45 minutes until golden and crispy. Let cool 15 minutes. Place plate on top and flip. Let cool for 15 minutes, then serve.
