Homemade Clementine Sugar
  1. Start by making sure the peels are dry. They should be really noisy when you drop them on a plate from a small height. You can dry them on the windowsill or you can also do this in a dehydrator.

  2. When they are all dry, pop into a coffee grinder, spice grinder or smoothie maker with a milling blade. Add the cornflour and blend till you have a clementine powder.

  3. Put the powder in a large jar with the sugar and pop the lid on. Shake till the mixture is even.

  4. I love using this sprinkled on top of cakes, pancakes and porridge. It really brings a delicious zestiness that I know you will love.
