Korean Potato Pancakes

    == Dipping Sauce:

  1. Blend the peeled and chopped potatoes and onion with 1 cup of water until smooth.

  2. Strain the potato mixture through a strainer or cheesecloth to remove excess water.

  3. Add the potato starch and salt to the strained potato mixture and mix well.

  4. Heat 2 tablespoons of oil in a large pan over medium heat.

  5. Scoop the potato batter into the pan and cook for about 3 minutes per side, or until golden brown.

  6. Optionally, place sliced chilies on top of the pancakes.

  7. Serve the potato pancakes with the dipping sauce.
