Apple Pie Banana Bread

Apple pie banana bread

Preheat oven to 350F and prepare a loaf pan.

Wet ingredients:

3 large ripe bananas, mashed

2 eggs

⅓ cup olive oil

⅓ cup maple syrup

¼ cup brown sugar

1 tsp of vanilla

1 apple, shredded and squeezed dry for moisture

Dry ingredients:

1 cup almond flour

1 cup oat flour

1 tsp each of sea salt, baking powder, and cinnamon

mix-ins/toppings:�

nut of choice (walnut or pecan would be great)!

Instructions

Mix the wet ingredients together until well-combined.

In a separate bowl, do the same for the dry ingredients. add the dry mixture to the wet and fold until uniform.

I stirred through some nuts at the last minute :) transfer batter to the prepared loaf pan and top with a sprinkle of sugar. bake for 45-50 minutes or until a toothpick comes out clean.

Let cool completely before slicing!
