Cacio E Pepe (pecorino Romano Pasta)
  1. In a bowl, add Pecorino Romano cheese and a pinch of black pepper

  2. Slowly incorporate hot water a little at a time and mix until it forms a paste

  3. Boil pasta until al dente

  4. Toast black pepper in a pan over medium heat

  5. Add a ladle of water to the black pepper to create a black pepper tea

  6. Transfer the cooked pasta into the black pepper tea

  7. Continue adding pasta water and stir until completely cooked

  8. Remove from heat and wait 2 minutes

  9. Add the Pecorino Romano cream mixture to the pasta

  10. Mix everything together with a spatula until well combined

  11. Add a little more black pepper to taste
