In a bowl, add Pecorino Romano cheese and a pinch of black pepper
Slowly incorporate hot water a little at a time and mix until it forms a paste
Boil pasta until al dente
Toast black pepper in a pan over medium heat
Add a ladle of water to the black pepper to create a black pepper tea
Transfer the cooked pasta into the black pepper tea
Continue adding pasta water and stir until completely cooked
Remove from heat and wait 2 minutes
Add the Pecorino Romano cream mixture to the pasta
Mix everything together with a spatula until well combined
Add a little more black pepper to taste
