Jerk Oyster Mushrooms
  1. In a large bowl, mix the garlic, thyme, allspice, cinnamon, nutmeg, cayenne pepper, smoked paprika, coconut aminos, lime juice, and your choice of maple syrup or honey. Stir well until everything is well combined.Add the oyster mushrooms to the bowl, making sure each piece is fully coated with the marinade. If you have time, let the mushrooms marinate for about 20 minutes to absorb the flavors.

  2. Heat the coconut oil in a large skillet over medium-high heat. Add the marinated mushrooms to the skillet, spreading them out so they cook evenly. Stir them occasionally, cooking for about 4-5 minutes until golden brown and slightly crispy around the edges.If you’re using the Scotch bonnet pepper for an extra kick, add it now and cook for another 2 minutes, stirring to ensure it blends well with the mushrooms.

  3. Taste the jerk oyster mushrooms and season with salt, black pepper, or more lime juice as needed.Garnish with the chopped green onions just before serving.
