Flakey Cheese Straws
  1. Mix flour, yeast and salt together

  2. Add the lukewarm water and stir really well until everything is combined and moistened

  3. Add the cheese and mix again well

  4. Scrape the sides of the bowl

  5. Cover and rest for 30 minutes

  6. Grate the cold butter into the dough and fold it over 6 times gently

  7. Cover and rest in the fridge overnight

  8. Preheat oven to 250°C and add a dish with water to the bottom of the oven to create steam

  9. Add parchment paper to a large baking dish

  10. Flour the surface, top of the dough and your hand

  11. Gently stretch the dough into a rectangle

  12. Cut the dough into thirds and then each third into 4 pieces creating 12 pieces

  13. Lift a piece of dough into the dish and gently twist once or twice in the middle, then twist the ends

  14. Cover with a tea towel and rest for 30 minutes

  15. Bake for 10 minutes

  16. Reduce heat to 230°C and remove the water dish

  17. Bake for another 10 minutes

  18. Flip the sticks over and bake for 5-7 minutes until golden
