Mix flour, yeast and salt together
Add the lukewarm water and stir really well until everything is combined and moistened
Add the cheese and mix again well
Scrape the sides of the bowl
Cover and rest for 30 minutes
Grate the cold butter into the dough and fold it over 6 times gently
Cover and rest in the fridge overnight
Preheat oven to 250°C and add a dish with water to the bottom of the oven to create steam
Add parchment paper to a large baking dish
Flour the surface, top of the dough and your hand
Gently stretch the dough into a rectangle
Cut the dough into thirds and then each third into 4 pieces creating 12 pieces
Lift a piece of dough into the dish and gently twist once or twice in the middle, then twist the ends
Cover with a tea towel and rest for 30 minutes
Bake for 10 minutes
Reduce heat to 230°C and remove the water dish
Bake for another 10 minutes
Flip the sticks over and bake for 5-7 minutes until golden
