Easy Teriyaki Chicken
  1. Preheat the oven to 180c fan bake and line a large roasting dish with baking paper or foil.

  2. Make the teriyaki sauce by combining soy sauce, water, brown sugar, oyster sauce, oil, vinegar, cornflour mixture, garlic, ginger, and pepper in a saucepan over medium heat. Simmer until thickened and then remove from heat.

  3. Slice each piece of chicken, score it, and arrange it in the prepared tray. Pat dry and coat with the teriyaki sauce.

  4. Bake in the oven for 40 minutes, brushing with more sauce during cooking.

  5. Serve with cooked rice, steamed greens, and herbs/spring onions. Optionally, add Japanese mayonnaise.
