Crispy Churro Bites
  1. In a saucepan combine water, butter, sugar, and salt

  2. Bring to a boil

  3. Add flour all at once and stir vigorously until the dough forms a ball and pulls away from the pot

  4. Remove from heat and let cool 3–5 minutes

  5. Add the 2 eggs, mixing until smooth, thick, and glossy

  6. Transfer the dough into a piping bag fitted with a star nozzle

  7. Heat oil to 350°F / 180°C

  8. Pipe small 1-inch pieces into the oil, using scissors to cut

  9. Fry until golden and crispy, about 2–3 minutes

  10. Drain on paper towels

  11. Mix sugar and cinnamon in a shallow bowl

  12. Toss warm churros inside until fully coated

  13. Heat milk gently (don't boil)

  14. Pour over the chopped chocolate

  15. Let sit 1 minute, then stir until smooth

  16. Add 1 tbsp butter for shine

  17. Add sugar if you want it sweeter or thicker

  18. If too thin, return to the pot and simmer 1–2 minutes to thicken
