In a saucepan combine water, butter, sugar, and salt
Bring to a boil
Add flour all at once and stir vigorously until the dough forms a ball and pulls away from the pot
Remove from heat and let cool 3–5 minutes
Add the 2 eggs, mixing until smooth, thick, and glossy
Transfer the dough into a piping bag fitted with a star nozzle
Heat oil to 350°F / 180°C
Pipe small 1-inch pieces into the oil, using scissors to cut
Fry until golden and crispy, about 2–3 minutes
Drain on paper towels
Mix sugar and cinnamon in a shallow bowl
Toss warm churros inside until fully coated
Heat milk gently (don't boil)
Pour over the chopped chocolate
Let sit 1 minute, then stir until smooth
Add 1 tbsp butter for shine
Add sugar if you want it sweeter or thicker
If too thin, return to the pot and simmer 1–2 minutes to thicken
