Roasted Vegetable Summer Plate
  1. Start by chopping your courgette into chunks and tossing them in a bowl with oil salt and pepper.

  2. Add them to the grill with the red pepper and let them char on one side and then flip.

  3. Chop up your mint and rocket and then de-seed and chop up your red pepper and then toss it all together in a bowl.

  4. Melt your butter with the chilli powder and sweet paprika and let it bubble away.

  5. Wilt down your spinach until it reduces then Plate up your yoghurt, top with the grilled veggies, then burnt chilli butter and some pine nuts and enjoy!!
