Whisk the eggs, milk, cinnamon, maple and salt together in a shallow bowl.
Dip one rice paper sheet into the mixture until coated, then place into a lightly greased frypan over medium heat.
Dip the second rice paper sheet into the egg mixture and place on top of the first.
Cook for 2-3 minutes, or until golden underneath. Carefully flip and cook for a further 2-3 minutes until golden and crisp.
Enjoy as is or topped with fresh bananas and chocolate.
You can also add slices of bananas in between the two rice paper layers!
