Add the cold butter and work it into the flour mixture until unevenly crumbly.
Stir in the chopped apple and cinnamon chips.
In a separate bowl, whisk together the eggs, vanilla extract, and applesauce.
Add the liquid ingredients to the dry ingredients and stir until moistened.
Line a baking sheet with parchment and sprinkle with flour.
Divide the dough in half and shape each half into a circle about ¾" thick.
Brush each circle with milk and sprinkle with the sugar and cinnamon mixture.
Slice each circle into 6 wedges and separate them slightly.
Freeze the scones for 30 minutes.
Preheat the oven to 425°F.
Bake for 18 to 22 minutes until golden brown.
