Butter Mochi
  1. Mix milk and butter in a pan. Add vanilla extract or vanilla bean paste if using at this point. Heat gently until butter melts.

  2. Meanwhile beat the egg with the sugar and salt till light and airy.

  3. Slowly add the milk to the egg, tempering to start.

  4. Mix in the vanilla essence if using.

  5. Mix in the glutinous flour and strain into jug.

  6. Pour into the well-buttered moulds. Preferably use non-stick pan as well.

  7. Bake at 360*f for 30-40 minutes. This will depend on the size of the pan. Can use Madeline pans or small muffin pans or decorative shaped pans.
