Season chicken breasts with oil, salt, and pepper
Cut up baby Yukon Gold potatoes and season with oil and salt
Add chicken and potatoes to a hot skillet, sear but don't cook through
Remove chicken and potatoes and set aside
Make sauce with butter, onion, and garlic
Deglaze with white wine
Add chicken broth, Dijon mustard, and heavy cream
Season with salt and pepper
Add parmesan cheese
Add chicken and potatoes back to the pot
Cook covered at 350F or on low heat for 10-15 minutes until potatoes are soft
