Charred Cabbage With Miso Sauce

  1. Char each quarter of the cabbage hard on the flat sides only till nice and golden brown.

  2. Turn cabbage over on its round side and make a smooth paste made of miso and hot water.

  3. Rub the paste on both sides that have been charred.

  4. Place in a 400°F degree oven for 7-8 minutes.

  5. For the miso sauce: Blend 1 ½ sticks of butter, 1 heaping tbsp white miso, juice of one lime, zest of half a lime, 1 tbsp Garlic confit, 1 cup boiling water, and 1 tsp sesame oil till smooth and keep warm.

  6. Fry shiitake mushroom sliced thin in 350°F oil till crispy and golden.

  7. Garnish with chopped scallions, green part only.
