Char each quarter of the cabbage hard on the flat sides only till nice and golden brown.
Turn cabbage over on its round side and make a smooth paste made of miso and hot water.
Rub the paste on both sides that have been charred.
Place in a 400°F degree oven for 7-8 minutes.
For the miso sauce: Blend 1 ½ sticks of butter, 1 heaping tbsp white miso, juice of one lime, zest of half a lime, 1 tbsp Garlic confit, 1 cup boiling water, and 1 tsp sesame oil till smooth and keep warm.
Fry shiitake mushroom sliced thin in 350°F oil till crispy and golden.
Garnish with chopped scallions, green part only.
