Sobia: Refreshing Beverage
  1. If you are using barley, rinse it thoroughly under running water. If you are using bread, tear it into smaller pieces.

  2. Soak the barley or bread in 4 cups of water for at least 4 hours, or overnight for best results.

  3. After soaking, blend the barley or bread along with the water it was soaked in until you get a smooth mixture. You can add more water if the mixture is too thick.

  4. Strain the mixture using a fine mesh strainer or cheesecloth to remove the solid particles.

  5. Return the strained liquid to the blender. Add sugar, vanilla extract, and cinnamon or cardamom powder if desired. Blend the mixture again until the sugar dissolves.

  6. Refrigerate the Sobia for at least 1-2 hours before serving. It is best when served cold.

  7. Serve the Sobia over ice cubes in glasses. Optionally, garnish with a sprinkle of cinnamon or cardamom on top.
