Preheat oven to 350°F (175°C) and grease or line a mini muffin tin, or preheat air fryer to 320°F (160°C) and prepare silicone liners
In a bowl, whisk together cottage cheese, eggs, vanilla, and honey/maple syrup until smooth
Add almond flour, baking powder, and salt to the mixture and stir until combined
Gently fold in blueberries, reserving a few to place on top for extra bursts of flavor
Bake in oven for 18–22 minutes until golden and set, or cook in air fryer for 12–15 minutes until firm and lightly browned
Let them cool slightly before removing from the tin or liners and serve warm or at room temperature
