Coconut Curry Chicken
  1. Add the diced onion, bell pepper, carrots, sweet potato, and regular potato to the slow cooker.

  2. Add the diced chicken tenders to the slow cooker.

  3. Add 2 heaping spoonfuls of garlic to the slow cooker.

  4. In a separate bowl, whisk together the brown sugar, curry powder, ginger, turmeric, soy sauce, coconut milk, and red curry paste.

  5. Pour the sauce mixture over the ingredients in the slow cooker and stir to combine.

  6. Cook on low for 7 hours.
