Preheat oven to 220C.
Place all filling ingredients in a bowl. Mix well.
To make the rice paper, place eggs and water in a shallow round dish. Whisk well.
Soak rice paper rounds in the mixture until just starting to soften.
Place 2 on a board, overlapping at the centre.
Add ¼ of the filling, fold in the sides and then roll up.
Add to a tray lined with baking paper.
Sprinkle with sesame seeds and spray with olive oil.
Bake for ~35-40 mins or until crispy.
Allow to cool then slice.
Meanwhile, mix together sauce ingredients in a small bowl.
Serve with sausage rolls.
