In a bowl, combine chicken mince with garlic powder, onion powder, Aromat, MSG, salt, and pepper. Mix thoroughly using your hands.
Divide the mixture into 4 equal balls and set aside.
Place each chicken ball on top of a mini tortilla and press it down firmly into a thin, even patty that spreads nearly to the edge.
Mix together the sauce ingredients in a small bowl. Taste and adjust seasoning to your liking.
Heat a non-stick or cast iron pan over medium-high heat.
Place each tortilla chicken-side down and sear for 3–4 minutes until golden and cooked through.
Flip and cook the tortilla side for 1–2 minutes to crisp.
Top each taco with a spoonful of sauce, shredded lettuce, sliced gherkins, and a generous grating of Parmesan.
