Creamy Potato & Crispy Sausage Pasta
  1. Peel and dice the potatoes

  2. Boil potatoes in a pot of salted water until tender

  3. Dice the onion and cut the provolone cheese into small cubes

  4. Add olive oil to a large pan

  5. Uncase the sausage and break them apart

  6. Fry sausage for about 5 minutes

  7. Add onions and fry until golden and crispy

  8. In another pan, add olive oil and toast the bread crumbs until golden

  9. Boil pasta in a pot of salted water until al dente

  10. Place fork tender potatoes in a container

  11. Season potatoes with salt and pepper

  12. Add Parmigiano Reggiano cheese, heavy cream, olive oil and pasta water to potatoes

  13. Blend the potato mixture until smooth

  14. Transfer cooked pasta to the pan with sausage and sauté for a few minutes

  15. Drizzle pasta with olive oil

  16. Add the potato puree and mix well

  17. Add a few scoops of pasta water

  18. Add provolone cheese and Parmigiano Reggiano cheese and mix well

  19. Serve hot and dust with toasted bread crumbs

  20. Top with crispy sausage and serve
