Peel and dice the potatoes
Boil potatoes in a pot of salted water until tender
Dice the onion and cut the provolone cheese into small cubes
Add olive oil to a large pan
Uncase the sausage and break them apart
Fry sausage for about 5 minutes
Add onions and fry until golden and crispy
In another pan, add olive oil and toast the bread crumbs until golden
Boil pasta in a pot of salted water until al dente
Place fork tender potatoes in a container
Season potatoes with salt and pepper
Add Parmigiano Reggiano cheese, heavy cream, olive oil and pasta water to potatoes
Blend the potato mixture until smooth
Transfer cooked pasta to the pan with sausage and sauté for a few minutes
Drizzle pasta with olive oil
Add the potato puree and mix well
Add a few scoops of pasta water
Add provolone cheese and Parmigiano Reggiano cheese and mix well
Serve hot and dust with toasted bread crumbs
Top with crispy sausage and serve
