Gravlax Salmon Bagels
  1. Mix together equal parts sugar and salt, black pepper, handful of dill, and zest from one lemon

  2. Place plastic wrap down and add half of the salt and sugar mixture

  3. Place salmon on top of the cure

  4. Cover salmon with remaining salt and sugar mixture

  5. Wrap tightly and press down with something heavy

  6. Refrigerate for two days

  7. Rinse the cured salmon several times under water

  8. Pat dry with paper towels

  9. Slice salmon into thin slices

  10. Toast cream cheese bagels

  11. Top bagels with cured salmon slices

  12. Drizzle with garlic oil

  13. Season with salt and pepper to taste

  14. Garnish with fresh dill and serve
