Place walnuts in the food processor and start to grind.
Scrape down the sides as necessary with a rubber spatula.
Continue grinding until the walnuts release their oils and turn into a thick and creamy spreadable butter (approximately 5 minutes).
Store in an air tight container or a mason jar. Refrigeration isn't necessary.
Serve on toast, apple slices or pancakes.
If desired, add 1-2 teaspoons of olive oil for creaminess or 1-2 teaspoons of maple syrup for sweetness.
