Heat oil in a large pan. Sauté onion and garlic until golden.
Add ground beef, cook until browned. Stir in spices, pine nuts, and pomegranate molasses. Cook 7 minutes, then remove from heat.
Stir in fresh herbs once slightly cooled.
Prepare puff pastry (thawed).
Style 1 (braid): Cut strips on each side, spread date paste down the center, top with half the filling, and fold strips over into a braid.
Style 2 (rectangle): Spread date paste on one half, add remaining filling, cut slits in the other half, fold over, and seal with a fork.
Brush with egg wash, sprinkle sesame seeds, and bake at 375°F for 45–50 minutes, until golden and flaky.
