Beefy Potato Zucchini Dinner
  1. Heat 2 Tbsp of butter and 2 Tbsp canola on medium/ high heat. Add in cubed potato. Stir and cook for about 5 minutes or until potatoes are almost done. I like a "bite" in my potato. It will soften more later in the skillet later.

  2. Transfer potatoes to a bowl or platter.

  3. In the same skillet, brown the ground beef. Drain.

  4. Add the zucchini, onions, garlic, salt, and pepper.

  5. Stir and cook until zucchini is crisp-tender and onions are translucent. I found covering it and letting it steam worked well.

  6. Once the zucchini and onions are cooked, add the potatoes and pizza sauce.

  7. Stir until combined and heat thoroughly. Check to see if you need more salt and pepper.

  8. Add cheese. Cover until the cheese is melted.
