Preheat the oven to 400°F
In a bowl, combine the sliced veggies and skirt steak, coat with avocado oil, and add the fajita seasoning
Transfer the fajita mixture to a sheet tray and place in the oven for 15-20 minutes until the veggies are soft and the steak is cooked
Remove from oven and add lime juice, cotija cheese, and cilantro to the top
Scoop onto tortillas and serve with queso sauce
