Shirazi Salad
  1. Slice the cucumber in half and scoop out the seeds to avoid the salad going soggy. Finely dice. You can leave to sit with a pinch of salt to draw out excess moisture.

  2. For the tomatoes, finely dice then add to a sieve with 1 tbsp salt. Leave to sit for 15 mins to draw out moisture.

  3. Finely dice the red onion, fresh parsley and mint.

  4. Drain the tomatoes and cucumber, reserving 2 tbsp of tomato juice.

  5. For the dressing, mix 2 tbsp olive oil, tomato juice, salt, pepper and juice of a lemon.

  6. Add the chopped tomato, cucumber, onion and fresh herbs into a large bowl, then mix well.

  7. Dress when serving so your salad stays fresh and not soggy. Serve alongside your main meal, or simply eat as a salad or as a dip.
