Low Carb Cheese Buns
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a microwave-safe bowl, combine the mozzarella and cream cheese. Microwave on high for 1 minute, stir, then heat for another 30 seconds until completely melted.

  3. In a separate bowl, mix together the almond flour, baking powder, and salt.

  4. Add the melted cheese mixture to the dry ingredients and stir until it starts to combine.

  5. Add the eggs and continue to mix, working it into a dough. You may need to knead it with your hands a bit to get it well combined.

  6. Divide the dough into 6 equal parts and shape each into a round bun.

  7. Place the buns onto the prepared baking sheet, leaving some space between them.

  8. Bake for 15-18 minutes, until they are golden brown and firm to touch.

  9. Once baked, let them cool slightly before serving.
