Add chicken, peppers and onions to a pan with some olive oil & Cajun seasoning.
Pan fry over a low heat until golden.
Add in the chicken stock, salt, pepper and tear in the lasagne sheets. Leave to simmer for 5 minutes.
Take off the heat and add the crème fraiche and Parmesan. Mix well.
Top with the grafted mozzarella and Red Leicester.
Bake in the oven for 20 minutes at 180 degrees C.
Top with fresh parsley and enjoy!
