Marinated Olives Dipping Oil And Creamy Dreamy Hummus

1 x 660g jar or 2 x 400g cans chickpeas (keep the aquafaba/chickpea juices from the jar/cans and reserve a few chickpeas for garnish)

1 tsp grated / crushed garlic

100ml tahini

¼tsp ground cumin

1 tbsp extra virgin olive oil

¾ sea salt flakes (or more to taste)

80ml cold, freshly squeezed lemon juice (I sometimes add a little more to taste)

A little ice cold water to loosen the mixture (with the aquafaba) if necessary

75g (2¾ oz) pitted Kalamata olives, finely minced

75g (2¾oz) pitted green queen olives, finely minced

1 tsp coriander seeds, lightly crushed

2 large garlic cloves, finely minced

1 tbsp finely minced fresh flat leaf parsley

1 tbsp finely minced fresh coriander

Zest of 1 small unwaxed lemon

1 tbsp pomegranate molasses

1 tbsp balsamic vinegar

150ml (5fl oz) extra virgin olive oil

2 tsp dried oregano

2 tsp pul biber (Aleppo pepper/ Turkish red pepper flakes)

For the Creamy Dreamy Hummus: Combine all ingredients in a food processor and blend until smooth. Add a little ice cold water if necessary to loosen the mixture.
For the ‘Marinated Olives’ Dipping Oil: Combine all ingredients in a bowl and mix well.
