Pizzelle
  1. In a medium bowl, beat the eggs and sugar together until light and fluffy.

  2. Stir in the melted butter and vanilla.

  3. In a separate bowl, whisk together the flour and baking powder.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Preheat a pizzelle iron and spray with non-stick cooking spray.

  6. Scoop about 1 tablespoon of batter onto the hot pizzelle iron and cook for 30 seconds to 1 minute, or until golden brown.

  7. Remove the pizzelle from the iron and let cool on a wire rack.

  8. Repeat with remaining batter.
