In a medium bowl, beat the eggs and sugar together until light and fluffy.

In a separate bowl, whisk together the flour and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Preheat a pizzelle iron and spray with non-stick cooking spray.
Scoop about 1 tablespoon of batter onto the hot pizzelle iron and cook for 30 seconds to 1 minute, or until golden brown.
Remove the pizzelle from the iron and let cool on a wire rack.
Repeat with remaining batter.
