Giant Homemade Sugar Cookies
  1. Preheat the oven to 350°. Whisk together the flour, baking soda, and salt; set aside.

  2. Put sugars in the bowl of an electric mixer fitted with the paddle attachment. and mix on medium speed for 30 seconds. Add butter; mix until pale and fluffy, about 1 minute.

  3. Mix in eggs, one at a time, then mix in the vanilla. Reduce speed, gradually add the flour mixture, and mix until just combined.

  4. Scoop dough using a 2-inch ice cream scoop; space cookies 2 inches apart on parchment-lined baking sheets.

  5. Roll the dough balls in the coarse sugar, then flatten the cookies slightly with the palm of your hand. Sprinkle tops with more sugar.

  6. Bake cookies until golden, about 15 minutes. Let cool on sheets on wire racks for 5 minutes.

  7. Transfer cookies to racks using a spatula; let cool completely.
