Mix together all purpose flour, fine semolina flour, salt, and sugar
Knead the mixture together until a consistent dough forms, being patient until it's no longer sticky
Add the dough to a well oiled bowl and let it rest for 30 minutes
Knead the dough for a couple more minutes
Divide the dough into 16 pieces and roll them into balls
Place the dough balls on a well oiled surface and let them rest for 30 minutes
With well oiled hands, flatten out one dough ball at a time until it's as thin as possible, thin enough to see through
Sprinkle the thin dough with semolina and melted butter
Fold the dough in on itself to create layers with semolina and butter in between
Toast the folded dough in a pan on each side, flipping regularly until golden brown all around
Serve with honey and mint tea
