Coconut Chicken Curry
  1. In a small bowl, add all the Curry Masala ingredients, stirring until everything is evenly mixed.

  2. Mix chicken, ginger, garlic, turmeric, tomato paste, apple cider vinegar, curry masala, and both soy sauces in a large pot or bowl to marinate for at least 2 hours in the fridge, up to overnight.

  3. Add a drizzle of oil and salt to the marinated chicken in a pot, cook on medium-low heat for 20 minutes.

  4. Increase temperature to medium, add lemongrass and curry leaves, cook for additional 10 minutes.

  5. Pour coconut cream, water, and add potatoes to the curry, bring to a boil then simmer on low heat for 45 minutes.

  6. Remove lid, increase heat to medium, let sauce reduce to desired consistency, season with salt and serve hot.
