Instructions:
The night before:
In a bowl, combine the oats, vanilla pulp, cinnamon, cold coffee, and plant-based milk.
Stir well, cover, and refrigerate overnight. This allows the oats to absorb the liquid and soften.
In the Morning:
Rinse and chop half the strawberries, then blend into a smooth puree. Dice the remaining strawberries into small cubes (about 5 mm) and mix them with the puree.
Remove the oats from the fridge and stir to loosen if needed.
Spoon into a bowl and top with nut butter, the strawberry mixture, and chopped nuts. Garnish with halved strawberries.
