Pre heat your oven to 200°c. I used the little loaf cases from Lakeland that were around £3.99 for 12. Handy to stock up on as they are great for mini loaf cakes.
Unroll your puff pastry and cut into four even strips. I cut mine slightly narrower than the base of my mini loaf cases.
Mix the cinnamon and sugar together in a small bowl.
Spread a tbsp of butter evenly on each strip, followed by a generous sprinkling of cinnamon sugar. Fold in half and press down. Cut 7-8 even strips almost all the way to the top, leaving a centimetre strip uncut along the top.
Twist each strip all the way up, then using the uncut end, roll into a neat log, securing with the loose end on the bottom. Place in the loaf case and brush with egg yolk. Sprinkle a little sugar on the top of each one and bake for 20 minutes.
