Chicken Milanese
  1. Beat eggs in a shallow bowl

  2. Mix flour with kosher salt and ground black pepper in another shallow bowl

  3. Place Italian seasoned bread crumbs in a third shallow bowl

  4. Coat thinly sliced chicken breast halves in flour mixture, then dip in beaten eggs, then coat with bread crumbs

  5. Heat vegetable oil in a skillet over medium-high heat

  6. Fry breaded chicken until golden brown and cooked through

  7. Serve over greens with your favorite dressing and lemon wedges
