Pork Belly Burnt Ends
  1. Cube pork belly into bite-size chunks.

  2. Season pork belly with Long Cloud BBQ Pork and Rib Rub.

  3. Smoke pork cubes at 120-130℃ until internal temperature reaches approximately 92℃ (about 2 hours).

  4. Prepare BBQ Sauce by mixing all the ingredients over low heat until sugar is dissolved.

  5. Coat the smoked pork belly cubes with the BBQ Sauce and return to the BBQ or smoker until the sauce becomes sticky.

  6. Serve on coleslaw in a roll with preferred accompaniments.
