Avocado Chickpea “tuna” Salad
  1. In a large bowl, mash the avocado with a fork until creamy.

  2. Add in the remaining ingredients and mix, using your fork to crush some of the chickpeas.

  3. Add in salt, lemon and freshly ground pepper.

  4. Serve with toasted bread.
